Amazingly tasty, the strawberries and blue cheese complement each other and having it with steak and a bearnaisse sauce is delicious.
- 1/4 cup white balsamic
- 1/2 cup extra virgin olive oil
- 1 tsp dijon mustard
- 1 bunch rocket / baby spinach (washed and drained)
- 4 slices of prosciutto or pancetta (torn into pieces)
- 1 punnet strawberries (hulled and quartered)
- blue cheese (crumbled)
Place balsamic, mustard and oil in a bowl. Season with sea salt and freshly ground black pepper, then whisk to combine.
Combine the rocket and strawberries in a large bowl, then tear over strips of prosciutto. Tear the grilled bread into chunks and add to the salad with the crumbled blue cheese. Toss gently to combine, then drizzle with the dressing and serve immediately.
