Really easy – a lot of it from the garden.
- toast some walnuts or any other nuts or seeds
- shaved parmesan or similar hard cheese (ensure it is very thinly sliced – the slicer on a microplane grater gives a thin slice)
- rocket or spinach or mix
- one red onion finely sliced
- 2 pears finely sliced – cut into 1/4s, deseed and slice on box grater or mandolin
- White balsamic vinegar
- salt and pepper to taste
Add onions and rocket to serving bowl and leave til just before serving.
When ready to serve add a splash of white balasmic and mix to coat, then add walnuts and parmesan and lightly toss.
