This is a similar dressing to the warm green salad except that I use palm sugar, cook it for a bit longer and add about 100g of cream cheese to make a creamy side dish to have with steak. The spices can be varied depending on what it is accompanying.
- ¼ cup olive oil
- 2 tbs balsamic vinegar
- 2 tbs water
- 1 tbs honey / maple syrup / palm sugar
- 1 tbs vegetable stock powder (vegetta)
- 1/2 tsp cinnamon
- 1/2 tsp cayenne
- 1 bunch spinach or silver beet (with the stems removed), finely sliced (alternately cook as below then put the lot into a food processor and blend till smooth – becomes more of a sauce)
- 1 onion finely sliced
- 100 g cream cheese, softened
Whisk the dressing ingredients together and heat to a simmer. Toss in the onion and washed silver beet / spinach and simmer until just wilted. Stir in the cream cheese and serve.
