SPINACH SAUCE

This is a similar dressing to the warm green salad except that I use palm sugar, cook it for a bit longer and add about 100g of cream cheese to make a creamy side dish to have with steak. The spices can be varied depending on what it is accompanying.

Dressing

  • ΒΌ cup olive oil
  • 2 tbs balsamic vinegar
  • 2 tbs water
  • 1 tbs honey / maple syrup / palm sugar
  • 1 tbs vegetable stock powder (vegetta)
  • Pepper
  • 1/2 tsp cinnamon
  • 1/2 tsp cayenne

Salad Greens

  • 1 bunch spinach or silver beet (with the stems removed), finely sliced (alternately cook as below then put the lot into a food processor and blend till smooth – becomes more of a sauce)
  • 1 onion finely sliced
  • 100 g cream cheese, softened

Whisk the dressing ingredients together and heat to a simmer. Toss in the onion and washed silver beet / spinach and simmer until just wilted. Stir in the cream cheese and serve.
